In the past 10 months I believe I have cooked a total of two meals for myself with the exception of grilling out in the summer. Having some time at home over the holidays has given me an opportunity to get back to a little cooking.
My most recent creation is baked mahi mahi over couscous with green beans. What little ingenuity I have was used to create the marinade for the fish: balsamic vinaigrette, fresh parsley, and some other assorted spices.
